Here are some of our favourite recipes using Okains Bay Seafood products.

Coconut Fish Curry

A tasty fish curry with a butter chicken twist.

Time & Serves

  • Serves: Serves 4

Ingredients

  • 600g Okains Bay Deep Sea Cod
  • juice 1/2 lemon
  • 1/2 tsp salt
  • 1 tsp minced ginger
  • 1-2 tbsp oil
  • 405g Wattie's Butter Chicken Curry Sauce
  • 1/4 cup cream or coconut cream
  • 2 tbsp chopped coriander or parsley

Method

1. Cut the fish into 3-4cm pieces and toss with the lemon juice, salt and ginger. Cover and set aside for 5 minutes.

2. Heat the oil in a lidded frying pan and when hot quickly seal the fish pieces on all sides.

3. Add the Wattie's Butter Chicken Curry Sauce , cream or coconut cream and coriander or parsley. Cover and simmer for 7-8 minutes until the fish flakes easily and is cooked.

 

Tips

Serve the fish over steaming hot rice with your favourite vegetable or salad.

Black Bean and Seafood Stir Fry

The unique Chinese flavour of Black Bean Sauce teamed with fresh fish and spinach and served on steaming hot noodles. Get out your chopsticks!

Time & Serves

Ingredients

  • 500g Okains Bay Deep Sea Cod
  • 1/4 cup flour
  • dash oil
  • onion, peeled and finely sliced
  • 1/2 750g bag Wattie's Frozen International Mix
  • 1 bunch spinach, washed and trimmed of stalks
  • 425g can Wattie's Stir Fry Black Bean Sauce

Method

1. Cut the fish into 2cm pieces and toss in the flour.

2. Heat the oil in a large lidded frying pan or wok and pan fry the fish over a high heat to brown the fish quickly. Transfer to a plate.

3. Add the onion to the pan and cook quickly over a high heat to brown. Add the Wattie's International Mix , spinach and Wattie's Stir Fry Black Bean Sauce and simmer 3-4 minutes until the spinach has wilted. Add the fish on top and warm through.

Serve over steaming hot noodles.
